This coming Monday, America will be celebrating the July 4th holiday. This is a time to reflect and appreciate the passion, vision, and sacrifice our founding fathers made in creating this great country. Over the years, so many Americans have given their lives to ensure our freedoms and prosperity. We at The New Love Center hope to honor the importance of this holiday through our service to those in need.
It’s also a holiday traditionally known for backyard barbeques, fireworks, and those delicious homemade side dishes. Sharing a meal with loved ones this weekend will create memories that last a lifetime.
In honor of this holiday weekend, we’d like to share this refreshing tomato, cucumber, and pepper pasta salad recipe. Tomatoes are packed with lycopene, an antioxidant that promotes cell health and helps lower your LDL, or ‘bad’ cholesterol. Cucumbers contain a variety of vitamins, minerals, and also antioxidants to promote vision and skin health, and much more.
Tomato, Cucumber & Pepper Pasta Salad Recipe:
Total time: 20 minutes
Servings: 8
Ingredients:
•2 tablespoons garlic & herb seasoning blend
•12 ounces penne pasta, cooked per package directions
•3 tablespoons lemon juice or white vinegar
•2 tablespoons chicken or vegetable broth
•1 red and 2 yellow roasted peppers, chopped
•2 medium tomatoes cut into bite-size pieces
•1 large chopped cucumber cut into bite-size pieces
•1 tablespoon olive oil
Directions:
•Combine olive oil, garlic & herb seasoning blend, lemon juice, and broth in a large bowl.
•Add prepared vegetables and pasta. Toss well and chill.
