Gimme Grouper!

Gene Long - a good day at sea!

The local grouper fishing season officially opened last Friday and our customers are loving it! Groupers are members of the sea bass family, Serranidae, and are found in tropical and warm temperate waters worldwide.  Like most seafood caught off the coast of North Carolina, the harvesting of grouper is closely monitored and regulated to ensure healthy stocks as a naturally renewable and sustainable resource.

Grouper has also become a popular choice of healthy conscious diners because it is nutritious, delicious and low in calories. Four ounces of uncooked grouper contains 110 calories, 2 grams of unsaturated fat and only 55 grams of cholesterol. Since it is also packed with calcium, iron and 23 grams of protein grouper is a smart addition to the mealtime rotation.

Because the grouper meat is so low in fat, some basting may be necessary when grilling, broiling or baking. It can be used in almost any seafood recipe (see our delicious suggestion below) and its unique flavor comes out beautifully with a touch of mild seasoning and fresh herbs.

How Much Should You Buy?

We recommend 1/2 pound per person per serving.

  • 2 cups frozen corn, defrosted
  • 2 cups broccoli floweretts, chopped
  • 1 red pepper, chopped
  • 2 Tablespoons Canola oil
  • Salt, to taste
  • 1 - 1 1/2 pounds fresh grouper
  • 3 Tablespoons canola oil
  •  juice of 1 lime
  • 8 flour tortillas
  • cotija cheese

1. Preheat oven to 400 degrees F.
2. In a large bowl, combine corn, broccoli and red pepper. Toss with 2 tablespoons of canola oil.
3. Line a baking sheet with foil and spread vegetable mixture on top. Place in oven for 20-30 minutes, until vegetables begin to brown.
4. Meanwhile, make a marinade by mixing remaining 3 tablespoons of canola oil and lime juice. Place fish into a zip lock bag and pour marinade over top. Seal bag and store in refrigerator for up to 30 minutes.
5. Preheat grill.
6. Remove the fish from the marinade and place onto a grill rack coated with cooking spray.  Grill for about 6 or 7 minutes on each side or until fish flakes easily with a fork.
8. Place tortillas on grill for about 20 seconds.  Remove and place 2 each on serving plate.
9. Divide fish and vegetables evenly over tortillas and garnish with cotija cheese.
