It's time to fire up the grill!  We thought we would share some basic suggestions on how to prepare fresh fish and seafood while enjoying the great flavors that only a grill can provide. Enjoy!

Shrimp, scallops, and small pieces of fish work nicely on kabobs, which can be marinated--or not--and cooked directly on the grill. Be sure to keep close tabs on the process--seafood tends to require less cooking time than meat.
 

You don't need a special basket to grill fish. As with any grilling adventure, start with a spotless grill. Add a couple tablespoons of vegetable oil to a clean kitchen cloth or paper towel. Use tongs to rub the grate lightly with the cloth or towel; this will prevent the fish from sticking. Most fish can be cooked right on the grate, at high heat.
           
Thin fillets or delicate fish can be wrapped in cornhusks or even banana or grape leaves, which can be found in specialty markets. Or you can keep things simple and go with the old standby, aluminum foil. Enjoy!

This salad is a great “make ahead” salad for your next pool party, back yard BBQ or picnic.  It is the perfect accompaniment to local shrimp or any fresh white fish. Only 150 calories per serving, this dish is also gluten free and provides an excellent source of Vitamin C and dietary fiber.
 
This recipe was adapted from the Cranberry Marketing Committee.

Ingredients:
  • 1 1/4 cups water
  • pinch inch of salt
  • 1 cup quinoa, rinsed
  • 1 cup dried cranberries
  • 1/2 cup minced carrots
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow bell pepper
  • 3 tablespoons finely chopped red onion
  • 3 tablespoons minced fresh cilantro
  • 3 tablespoons fresh lime juice
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon salt
  • Pinch of ground red pepper
Instructions:

1. Toast quinoa in a  skillet over medium high heat stirring frequently until quinoa is fragrant and make a continuous popping sound (about 5- 7 minutes).
2. In a small saucepan, bring water and pinch of salt to a boil over high heat; stir in toasted quinoa, reduce heat and bring to a low simmer. Cover pot and cook until all liquid is absorbed (about 15 minutes).
2. Remove from heat and transfer to a medium bowl. Cool to room temperature. Cover and refrigerate until ready to use.
3. To the bowl of quinoa, stir in cranberries, carrots, red and yellow peppers, red onion and cilantro until mixed.
4. In a small bowl, mix together lime juice, oil, salt and ground red pepper and pour over quinoa-cranberry mixture; toss to coat evenly. Cover and refrigerate at least 2 hours before serving. Does not have to be served cold.
