It's oyster season! Every day our fisherman are bringing in some of the best oysters you'll find on the coast. Did you know oysters can boost immunity (zinc) and increase energy (Vitamin B)? Whether inviting friends over for an oyster roast or serving them up for dinner, Mott's Channel Seafood oysters can be purchased by the dozen, peck, half bushel or whole bushel. We also offer shucked oysters by the pint.

What to do with the shells? Here at Mott's Channel Seafood we encourage recycling and even repurpose many of ours into our parking lot. There are several places in town where you can take your leftovers...

Recipe submitted by Diane Boyd and adapted from the Washington Post's Grilled Oysters with Smoked Paprika-Peach Sauce. Makes 16 appetizer servings.


For the sauce

  • 1/4 cup unsalted butter, melted
  • 2 cups frozen peaches, defrosted
  • 2 tablespoons smoked paprika
  • 4 tablespoons Italian parsely, chopped

For the oysters

  •  1/2 bushel fresh oysters

For the smokey peach sauce

1. Remove peaches from freezer and thaw. Place thawed peach slices in blender and puree.
2. Melt butter in saucepan over medium heat.
3. Add peach puree and smoked paprika. Cook for 3 minutes, stirring frequently.
Sauce can be made several hours before serving. Reheat slowly and add fresh chopped parsley just before serving.

For the oysters

1. Rinse and scrub oysters.
2. Fill large stockpot with several inches of water. Bring to a boil. Add a steamer basket to pot.
3. Fill steamer basket with oysters. Replace lid on pot and cook until shells open slightly.
4. Shuck oysters carefully by removing top shell. Place on platter and serve with sauce.
