We've had just enough warm weather that "all things spring" feels just around the corner. Maybe it's time to dust of the grill, perhaps serve dinner on the porch? Well...here are just a few fresh ideas to ponder while Mother Nature decides it's spring for good.
Oysters: Just a few more week left but wow are they delicious!
Red Drum: Fishermen along the coast have been posting some amazing photos of this beautiful fish. For those who would rather not cast a line, come see us!
Striped Bass:Also known as Rockfish, the meat of a striped bass is a happy medium between flaky and meaty. Its texture lies between cod or sole and swordfish or tuna.

Savor the last few weeks of the oyster season with this simple yet flavor-full dish. This is a super simple and absolutely delicious recipe. Oysters on the half shell are topped with Parmesan and garlic butter and baked until bubbly. Also, please share your seafood culinary successes with us via Facebook, Instagram or Twitter.

1 dozen fresh Motts Channel Seafood Oysters on the half shell
1/2 cup freshly grated Parmesan cheese
1 stick unsalted butter
4-6 garlic cloves, pressed or minced
3 tbs fresh parsley, chopped for garnish
Pre-heat oven to 400 degrees.
In a microwave place the butter in a micro safe dish along with the garlic and cook until the butter has melted.
Place the oysters on a foil covered baking sheet and spoon a tbs of the butter and garlic mixture over each oyster.
Add a tbs of the grated Parmesan over each oyster.
Bake in the oven for about 10 minutes or until the cheese has melted and browned slightly.
Garnish with the chopped parsley.
