Go on, take a bite! Buttery, delicious, and surprisingly easy to cook, we think that scallops are truly a treasure of the sea. The soft fleshy texture and delicately mild sweet flavor of scallops are enjoyed by even those who are not particularly fond of fish or other shellfish.
Scallop Storage Tips To ensure maximum freshness and quality, we recommend placing the scallops in a plastic bag and sit the bag on a baking dish filled with ice. The baking dish and scallops should then be placed on the bottom shelf of the refrigerator, which is its coolest area. Scallops can be refrigerated for up to two days, although they should be purchased as close to being served as possible.
Some Quick Dinner Ideas
Skewer marinated scallops, leeks and cherry tomatoes, and broil in the oven. Brush with garlic olive oil when done.
Serve lightly cooked scallops with a salsa made from diced papaya, cilantro, jalapeno peppers and ginger.
Sauté scallops with ginger, shiitake mushrooms and scallions.
Add scallops to your gazpacho for extra flavor and nutrients.

This recipe is a great addition to a cocktail party but could easily be served as the main entree at your Airlie Garden concert picnic. I got the recipe from a caterer who served it at a cocktail party. I give him credit in the name.
Serves 8 as main entree or 12 when part of a cocktail buffet.
3 lbs. cooked and chilled fresh Motts Channel Seafood shrimp
1/4 cup sugar
1/2 cup red wine vinegar
1/2 teaspoon crushed red pepper (more if you like a real kick)
1/2 red onion cut in half, sliced thin
1/2 red pepper, thinly sliced
1/2 cucumber, peeled and sliced
2 plum tomatoes, chopped
1/2 fresh pineapple cut it chunks
1/2 bunch parsley or cilantro, chopped
1) Mix sugar, vinegar and crushed red pepper.
2) Add remaining ingredients and stir.
3) Serve chilled.

Returning to the south end of Wrightsville Beach, this forum is for all levels of female surfers; amateur to pro and experienced. Divisions will include: Pro Shortboard and Pro Longboard, open to all ages, and amateur shortboard and longboard, grouped by age. The popular Stand Up Paddleboard division as well as the crowd favorite Tiny Wahine event will complete the competition.
