Salmon for Supper!

You probably already know that fish and seafood are healthy additions to a well-balanced diet, and salmon is one of the most nutritious fish out there. It is naturally low in salt/sodium, a good source of protein, niacin, vitamin B6, vitamin B12 and selenium.  The American Heart Association recommends consuming 3.5 ounces of salmon twice a week for cardioprotective benefits. 

Salmon is very versatile and lends itself well to a variety of recipes and spice combinations. It has a mild, tender taste, and many people who don't like other fish enjoy salmon.

Since salmon is not indigenous to our coastal waters we source Norwegian Salmon which arrives to our store three times a week. That way we can ensure the best quality salmon available every day of the week!

St. Patrick's Day may be over for this year, but you can still celebrate the ‘patty’ all month long by stacking some delicious salmon patties (aka salmon cakes or salmon burgers). So make a little extra tonight, and use the leftovers for a second wholesome meal fit for the health conscious. Leprechauns included!

Serves 4. Recipe courtesy of Diane Boyd.


Ingredients:
  • 1 to 1.5 pound fresh salmon, coarsely chopped
  • 1 small finely cut onion
  • 2 tablespoons fresh lemon juice
  • 1 whole egg, lightly beaten
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • pinch of cayenne pepper
  • 1 cup panko breadcrumbs
Instructions:

1. In a mixing bowl, flake cooked salmon with a fork.
2. Add onion, lemon juice, egg, salt and pepper. Mix to combine.
3. Add just enough panko to bind the mixture together (1/4-1/2 cup).
4. Shape into 4-6 patties and coat exterior with remaining panko.
5. Place on a non stick cookie sheet or one that has been sprayed with olive oil.
6. Refrigerate for 30 minutes.
7. Bake 375 degrees F for 30 to 40 minutes or until browned.
8. Serve in a bun or on top of a fresh green salad.
