Besides a super cool presentation, the bones and skin of the fish will help make the meat of the fish extra juicy and flavorful.
Here are the basics you need to grill it great! Selecting Your Fish A few things to check at time of purchase:
Eyes: Clear and bright without a gray film
Scales and fins: Bright and shiny
Smell: Fresh, not overtly “fishy”
Gills (if still attached): Blood red, not dull or brownish
Great Grilling Fish Varietals Motts Channels Seafood suggests these delicious whole fish options for grilling:
Seasoning the Fish Use fluffy green fresh herbs to protect your fish from excess heat and stop it from sticking to the basket or grill grate. Suggestions include garlic and basil, dill and lemon, or orange and fennel tops. Prep and Cook Rinse and dry your fish well, keep an eye out for any loose scales that may have stuck to the fish while being cleaned at the market.
Once the fish is clean and dry in and out rub all over with olive or other favorite oil then salt and pepper the fish well.
If you are using a fish basket, spray it with cooking spray inside and out. If no basket, make sure your grill surface is very clean and hot before you put the fish on there to help avoid sticking. Medium high heat is like high heat on most grills and will get the skin to crisp up while also cooking delicious juicy and tender meat inside.
You only want to flip it just one time. Check your recipe (we have a great one to try below) and stick to it!

1, 5-pound, two 2 1/2-pound, or three 1 1/2-pound head-on fresh fish from Motts Channel Seafood such as snapper, grouper, red drum or sea bass, scaled, gutted
1/4 cup olive oil plus more for oiling and drizzling
2 limes or 5 Key limes, thinly sliced, plus 1/4 cup fresh lime juice
1/2 bunch each basil and cilantro, stems and leaves separated
Heat a gas grill to high.
Score fish: Cut 1 slash lengthwise down to the bone, then crosswise in 2 places, spacing apart; repeat on other side.
Season fish cavity and skin with salt; drizzle fish with 1/4 cup oil. Stuff some of the lime slices (reserve a few for garnish) and herb stems inside fish.
Clean and oil grill grate well. Grill fish, resisting the urge to turn it, until skin is nicely crisp and charred and flesh is flaky and opaque down to the bone. (This can take 6–15 minutes, depending on size of fish.)
Place a metal spatula underneath fish (a pair of metal tongs on top of fish also helps for support), then lift and gently roll over to the other side. Cook until flesh is flaky and opaque down to the bone, 6–15 minutes. Use a small knife to check for doneness; if it slides easily through the thickest part of flesh, fish is done. If not, finish cooking fish on grill or in a 450° oven.
Place fish on a serving platter; drizzle oil and lime juice over. Garnish with reserved lime slices, basil leaves, and cilantro.
