Marou opens first cacao lab in Ho Chi Minh City

Since crafting the first bar of Marou Chocolate in their kitchen in early 2011, Vincent Mourou and his partner Samuel Maruta, have scooped up a raft of international awards and tickled the world's imagination about cacao from Vietnam. Today, Marou opens the first cacao lab in downtown Ho Chi Minh City: Maison Marou.

Maison Marou is bringing the heady scent of roasting cacao to the buzz of downtown Saigon.
Visitors to 167-169 Calmette will discover a patisserie and café tucked amid the flow of a small, working chocolate factory.

Positioned at the heart of Ho Chi Minh City's newly-vibrant riverfront ward, Maison Marou offers seekers of an authentic chocolate adventure a place to land.

“At Maison Marou, you'll get the full 360 degree experience”, said Marou co-founder Vincent Mourou. “We'll take you from cacao bean to chocolate bar and beyond.”

All-Star Pastry Team

Maison Marou Manager Jason Laurent trained as a pastry chef at the Culinary Institute of America in New York. He describes his team like a group of child prodigies trapped in a candy store. “We can literally do anything we want with our chocolate”, he said.

Fourth-generation pâtissière Stéphanie Aubriot has helped define Maison Marou's world class menu of entremets, ganaches and bon-bon created with dark chocolate many describe in language often reserved for fine wine.
Aubriot first started working with Marou’s Lam Dong single-origin chocolate while heading the pastry team for legendary 3-Star Michelin Chef Michel Roux Snr at Danang’s La Maison 1888 restaurant.

“Most pastry chefs never see a cacao pod,” Aubriot said. “So being able to visit a farm where
your chocolate grows is a real privilege—Chef Roux thinks I'm lucky.”
Bangkok-born Chef Gun Arunpraphan, sought out Marou like a bloodhound trailing a chocolate  mousse while on a brief soujourn to Saigon. After a few hours in the Marou factory, he passed up a job in Paris to join the Maison Marou Team.
“There's nothing like this in Bangkok that I know of,” he said. “In fact there's nothing like this in the world!”
