Moving into Fall brings opportunities for new recipes and flavor, but it can also bring upon stress with the many social gatherings and not knowing what to cook, or how to conquer those temptations. Today I want to bring you a few recipes to 'leaf' through, and tips to help you all season long!

Seasonal Ingredients

Eating 'In Season' is important for various reasons! One of the main reasons, is to help cut the produce costs to keep you within your budget. The produce prices will be cheaper because you are buying foods that are NOT being sourced from all over the world leading to transportation costs. Also, some out-of-season foods are frozen before ripening, and thawed at the grocery store leading to refrigeration costs.

'In season' foods are FRESH, and the abundance of these foods waiting to be eaten lead to lower costs due to stores wanting to sell these items before they spoil. I urge you to buy 'in season' and local // from there we can spark cooking ideas!

MEATY RICE STUFFED PUMPKINS

  • 3 small pumpkin pie pumpkins
  • 1 head cauliflower, chopped into florets
  • 1 bundle of spinach, stems removed
  • 1lb ground beef
  • 1 cup chicken or beef broth
  • 1/2 yellow onion, diced
  • 1 egg, whisked
  • 1 garlic clove, minced
  • 2 tablespoons herbes de provence
  • 1 tablespoon garlic powder
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • salt and pepper, to taste
  • 1-2 tablespoons fat (I used olive oil)
