Dear Conscious Readers,

This is week 7 of the Zero Waste Switch Challenge, and week 2 of my month and a half away from home. I'm having a lot of fun staying at my friends' places, but I can now safely admit that I miss.... my blender!

If you've been following me for a couple months now, you might have already read this article and the recipe I'm gonna share. For those who haven't, I'm just gonna repeat what my friend used to say: "Humans are the only mammals who still drink milk once they've reached adulthood".

ZWswitchallenge #7 - Make your own nut milk

Almond milk is a great alternative to cow's milk and it's so easy to make, you won't regret hauling these milk bottles back from the store.

EQUIPMENT
Measuring cups
1 bowl (to soak the almonds in)
1 blender
Cheesecloth
Measuring spoons
1 bottle (to store the almond milk)

INGREDIENTS
1 cup of almonds
5 cups of filtered water
(optional) 1/8 tsp himalayan salt
(optional) Vanilla or 1 date

INSTRUCTIONS
Soak the almonds in water overnight, at least 12 hours (I sometimes skip this part if I'm in a hurry but it is highly recommended.)
Rinse the almonds.
Put the 1 cup of almonds and 5 cups of water in a blender and blend for 1 minute.
Strain the mixture into a large bowl or pitcher through a cheese cloth.
(optional) Put the mixture back into the blender with vanilla, dates, or any other sweetener and add 1/8 ts salt.
Store in a sealed container in the fridge for up to one week.

This recipe works with all kinds of nuts, and the best part might be that we then makes cookies out of the remaining almond meal.
