Mighty Mousse!
 
I must admit... I was in LOVE with Mighty Mouse when I was a little girl. The most handsome, strong, protective mouse in the world! Who could ask for more?

This Mighty Mousse has a lot in common with my first love. It's strong in nutrients, it's very good-looking, and protective? Absolutely! It builds our immunity and protects us from mean, nasty viruses!

I hope you fall in love with it like I loved Mighty Mouse!

Sweet and creamy, filled with nutrients, no sugar other than the natural sugar from the mango... A healthy dessert lover's dream.

Eat dessert first - Why the heck not?

 
Mighty Mousse


Prep Time - 10 minutes

Cooking Time - n/a but needs refrigeration

Yield - 4 servings

Ingredients


- 3 mangoes, peeled and diced (can also use frozen - about 4 1/2 cups)

- 1 (13.5 oz) can coconut cream

Directions

1. Set 1/2 cup mango aside for the topping.

2. Purée the rest of the mangoes in the food processor 


3. Blend in coconut cream until fully incorporated.

4. Spoon into pudding dishes and top with saved mango. (You could use shredded coconut as a topping instead of mango, or in addition.)

5. Refrigerate until firm, about an hour.

 
Mangoes provide a nice dose of Vitamin C, 60mg per 1 cup.
Coconut Cream is antioxidant and strengthens the immune system.

Note - This recipe is NOT low calorie... Coconut cream does pack a good dollop of fat, so do limit your portions!
